Adzuki Beans (Vigna Angularis) are a small, oval bean that is reddish-brown in color with a thin white line down the side. The bean is about 1/4" long with a nutty, sweet flavor and firm texture. This is a bush bean rather than a vine bean. The Adzuki is native to East Asia and was brought to the U.S. in the mid 19th century. When steamed with rice, the bean gives the rice slightly pink color which is quite attractive. The Adzuki is also referred to as a Adsuki, Aduki, Asuki, Azuki, Feijao, Tiensin Red, Field Pea, and Red Oriental bean.

Suggested Use:
This bean is commonly used in Asian cuisine. In Japan, Adzuki beans are used in confections. Simmer with lentils and vegetables for a hearty stew, or add cooked adzukis to stir fry recipes.

Ingredients:
Adzuki Beans.

Basic Preparations:
Soak overnight. Rinse and place in a large pot and cover with fresh water. Bring water to a boil for 3 minutes, reduce heat and simmer, covered, for 35-45 minutes until tender. One cup dry yields 3 cups cooked.
