SZECHUAN PEPPERCORNS, also known as fagara, ARE NOT actual peppercorns. Fagara comes from THE BERRIES of a small, PRICKLY ASH TREE WHICH GROWS IN THE SZECHUAN REGION OF China. THIS CENTRAL PROVINCE IS WELL KNOWN FOR THE SPICY CONTRIBUTIONS IT OFFERS TO CHINESE CUISINE. The szechuan peppercorns have a spicy, woody aroma that GIVES A TINGLING SENSATION TO THE TIP OF THE TONGUE. THIS sensation IS CAUSED BY THE RELEASE OF AN ENZYME. Szechuan peppercorns are an essential ingredient in Chinese five spice powder.
